Good old Farro

Good morning everyone! Yesterday I made for the first time something that is very Italian and for some reason I never tried before…

The complexity of this recipe is 0 so I´m very happy to share with all of you. Plus it´s very cheap.

-Ingredients for two people:

  • 200 g Farro
  • 1/4 pumpkin, cut and diced
  • The white part of a leek finely chopped
  • Half celery brunch finely chopped
  • 1/2 white onion, diced
  • 1 small red onion, diced
  • 1 Glass of white wine
  • Olive oil as needed
  • Salt and pepper as needed
  • Dill for finishing touch
  • 15 small mushrooms
  • 1 Vegetable stock cube
  • 1 Big carrot, cut and diced
  • 1/2 Can of plumb tomatoes

-How to: First of all start by cutting all the vegetables.

Set the onions with olive oil in a pan and ass salt to taste. Wait till they turn golden and deglaze with the wine (wait till the alcohol evaporates). Then start adding the vegetables from hard to soft and let them cook for about 15 minutes stirring from time to time. Add olive oil or a couple of tsp of water if needed for them not to get stuck in the bottom of the pan. Check salt.

Then add the farro and the plumb squished tomatoes, also add water to cover the ingredients and finally add the vegetable stock. Stir to blend and let it cook for about 15-18 minutes. Check salt and pepper and you are ready to go…super easy, super delicious!

Top it with some parmesan or grana padano cheese  before serving and enjoy!!
